Smoky Slit Pea Soup with Kale

Let’s Get Started!

Ingredients Needed

  • 6 cups of veggie broth
  • 1 Tbsp. liquid smoke
  • A pinch of celery salt
  • ½ tsp garlic powder
  • 2 cups yellow split peas, rinsed and drained
  • 1 large Yukon gold potato, diced
  • 3 carrots diced
  • 2 big handfuls of kale, the tough stems removed and chopped into bite-sized pieces
  • ½ tsp fresh chopped thyme
  • Black pepper to taste

Directions

  1. Add broth, celery salt, liquid smoke, split peas, garlic powder, potato and carrot to a large soup pan and let boil for ten minutes.
  2. Bring down to a simmer, add thyme and cook for another r30 minutes and give it a good stir to help break up the split peas into kind of a mushy consistency.
  3. Add kale, stir through and cover.
  4. Cook for another 5 minutes, taste for seasoning and add pepper.

Benefits

Kale is great for opening blood vessels. Split peas have plenty of fiber and can lower cholesterol and blood sugar.
