Add the quinoa and water to a pot and bring to a boil. Cover and simmer 10-15 minutes or until water is absorbed. Let it cool. The quinoa may be prepared ahead of time if you wish.
Set the oven to broil. Cut each fig in half lengthwise and place flat side down on a foil lined baking sheet. Make sure there is space in between them. Broil for 2 minutes, then flip them over and broil another 2 minutes. Cool long enough to cut each half into halves.
In a large bowl, place the yogurt and squeeze as much juice as you can from the orange. Whisk together. Cut peaches into small dice and add to the yogurt. Add blueberries and quinoa and blend. Stir in figs last.
Quinoa is a major source of protein, fiber and other vitamins and minerals.
All the fruits here are loaded with anti-oxidants, vitamins and of course all contain fiber.
Over all this dish is healthful and very satisfying!
