Let’s Get Started!

Ingredients Needed

  • 1 head romaine or dark leaf lettuce
  • 1 small red onion
  • 2 cups spinach
  • 1 small jalapeno pepper
  • 1 can black beans
  • 1 ear corn (or small bag frozen)
  • 1 can black-eyed peas
  • 1 avocado (Hass)
  • 2 cups purple cabbage
  • 1 lime
  • 1 yellow or orange bell pepper
  • black pepper
  • 1 cucumber

Directions

If you have a glass bowl, use this so that you can see the layers. Chop the greens and spinach and add to the bowl. Rinse the beans thoroughly and set aside. Chop the cabbage and add on top of the greens. Chop the peppers, cucumber and about ¼ cup of onion and add to a small bowl. Cut the corn off the corn and add (or add about 1 cup frozen). Mix together and season with fresh ground black pepper. Layer both types of beans on top of the cabbage. Add the vegetable mixture on top. Slice the avocado and arrange on top. Drizzle it all with juice from the lime. You can serve this with your favorite dressing or just eat it as is.
